Cherries with Ricotta Mousse and Traditional "Extra Vecchio" Balsamic Vinegar of Modena PDO

12 Cherries
500 g Fresh ricotta
150 ml Fresh cream
50 g Icing sugar
1 Vanilla bean
Traditional “Extra Vecchio” Balsamic Vinegar of Modena PDO

Method:

Leave the ricotta to drain for a few hours in a fine-mesh sieve. Slice the vanilla bean and scrape out the seeds. Add the vanilla seeds to the fresh cream (kept very cold in the refrigerator) and whisk until stiff peaks form. Add the ricotta and icing sugar to the whipped cream and gently fold from the bottom to the top. Wash and dry the cherries. Cut 8 cherries into small pieces and pit them, season them in a bowl with a teaspoon of Traditional “Extra Vecchio” Balsamic Vinegar of Modena PDO and leave them to marinate.
Transfer the fruit to the bottom of 4 glasses that will be used to serve the dessert. Add the ricotta mousse and refrigerate for about 30 minutes. After this time, decorate each glass with a cherry on top and season with a few drops of Traditional “Extra Vecchio” Balsamic Vinegar of Modena PDO.
