Judging by the results, the future of Traditional Balsamic Vinegar of Modena P.D.O. can count on a new generation of highly capable young people who are determined to give their best in the world of work, which they will be entering in a few weeks' time. These young students are ready to enter the kitchens and dining rooms of restaurants in Italy and beyond, putting into practice what they have learned during their three years of study at the IAL, the Hotel and Restaurant School in Serramazzoni. They bring with them an added awareness: the uniqueness of Modena's black gold, an inimitable condiment, which they will be called upon to enhance in their recipes and present to diners. This result was made possible thanks to the \u201cGiovani Talenti Balsamici\u201d (Young Balsamic Talents) competition promoted by the Association of Expert Tasters of Traditional Balsamic Vinegar of Modena P.D.O. in collaboration with the Consorzio Produttori Antiche Acetaie (Consortium of Ancient Vinegar Producers).<\/p>\n\n\n\n
Giunta alla sua quinta edizione, l\u2019iniziativa si sviluppa nell\u2019arco dell\u2019intero ciclo di studi, con una serie di momenti di aggiornamento che, oltre alle tradizionali lezioni, prevede visite all\u2019interno di acetaie volte a far conoscere come nasce e si affina il prodotto. Il concorso \u201cGiovani Talenti Balsamici\u201d rappresenta il momento clou pi\u00f9 spettacolare, di una convenzione tra AED e Consorzio Produttori Antiche Acetaie e lo IAL, che comprende anche la gestione dell\u2019acetaia della Scuola.
