TheExtra Aged Traditional Balsamic Vinegar of Modena P.D.O. in culinary use is an extremely versatile product, but also sensitive. It is versatile thanks to the perfect harmony and balance between its sweet aromatic and acetic components, which make itsuitable for pairing with any dish from starters to desserts, from meat to fish, from elaborate and complex dishes to simpler ones. At the same time, ABTM is sensitive because, being primarily a condiment and not an ingredient, it is best used on its own directly at the table.
Grapes from DOC vineyards in the province of Modena are mainly used, with typical varieties such as Lambrusco, Ancellotta, Trebbiano, Sauvignon, Sgavetta, Berzemino and Occhio di Gatta.
The grapes are processed to obtain the must, which is then cooked.
The cooked must undergoes acetic fermentation by specific strains of acetic acid bacteria, often organised into bacterial colonies known as ‘mother cultures’.

Annually, during the ageing period, approximately 25-30% of the contents are removed from the smallest barrel. The liquid is then replenished with that from the next largest barrel, and so on until the largest barrel, which is topped up with the cooked must of the vintage.
A panel of expert tasters evaluates the product to authorise its marketing.

Each bottle receives a numbered seal to guarantee the origin and organoleptic quality of the product. Only then can it bear the designation ‘Traditional Balsamic Vinegar of Modena P.D.O.’.
Tradition and design have come together to create a glass bottle that retains only the upper shape of the ancient Etruscan form, while the base is almost like a pedestal set in a spherical mass. A “two-faced Janus” that allows the label with the legal requirements and correct bottling practices to be affixed on one side, and the producer's label on the other.
The packaging echoes the historical symbolism of Modena's condiment (the silhouette of the cathedral and the vinegar barrel) and recurs as a texture across the entire surface of the boxed package.
