Consorzio Produttori Antiche Acetaie


Il Consorzio Produttori è stato fondato nel 1979 grazie all’intuizione di un gruppo di produttori familiari con un duplice scopo: promuovere la conoscenza di un prodotto dal gusto inimitabile, utilizzato quasi esclusivamente nella provincia di Modena, e diffonderne la cultura al fine di ottenere il riconoscimento comunitario per consentirne la commercializzazione.

Tutte le attività svolte dal Consorzio hanno portato il 17 Aprile 2000 l’Unione Europea ad attribuire la Denominazione di Origine Protetta all’Aceto Balsamico Tradizionale di Modena.

Il 13 Aprile 2011 il Consorzio Produttori ha cambiato la sua denominazione in Consorzio Produttori Antiche Acetaie.

Unique Bottle

Unique and mandatory for all manufacturers of 100 ml capacity.

Product tasting

Each batch that the producer wishes to market must pass the organoleptic examination carried out by expert tasters.

Product bottling

Once it has passed the test, the product must be bottled in one of the public centres authorised by the ministry.

Guarantee seal

Each bottle has a seal of guarantee bearing a double number. The Consortium keeps one bottle from each batch bottled since 1985 at the ABTM Servizi Srl Bottling Centre to ensure product traceability.

A past rich in history

Centuries of history and tradition come together in the production of ‘Balsamic Vinegar’.
Until the mid-1980s, balsamic vinegar was a product jealously guarded in the attics of Modena families and was known almost exclusively in the province of Emilia.

A present steeped in quality

A small number of producers, just a few hundred, are now the public custodians of the original ‘recipe’, an immense heritage for the world of global gastronomic culture. Several thousand barrels, individually registered and stored in attics in the province of Modena, accompany the product for decades as it ages and matures correctly.

A future of tradition

“The future of tradition” began on 17 April 2000 with EU recognition, which represents a great opportunity for the entire province of Modena to revitalise local agriculture and enhance the value of the rural world, with the certainty that the investment made in the product will be protected.
For producers, it represents an opportunity to pass on and spread the culture and tradition of a product that is unique in the world, born from the most noble rural heritage. For consumers, on the other hand, EU recognition offers the chance to enjoy the inimitable aromas and flavours of a product that will bring them into contact with ancient stories and traditions, guaranteeing that they are savouring a certified product.
