Bring water to the boil in a small, high-sided steel saucepan. Immerse the eggs (kept at room temperature) completely in the water, taking care not to knock them against the sides of the pan. We recommend placing them in the pan using a spoon. Cook for about 2 minutes; if you prefer your eggs more well done, cook for 3 minutes. Drain the eggs and run them under cold tap water for a few minutes. Dry them and remove the top part of the shell. Season with salt and serve with a few drops of Traditional Balsamic Vinegar of Modena P.D.O.
